strictly speaking this item was borrowed from the bakery trade, as chefs had no distintive uniform of their own.In classic kitchen the height or size of the hat denotes the seniority of the wearer, sometimes reaching ridiculous proportions.A firm starching is required and this can be uncomfortable in the hot enviroment of the kitchen as streams of starch and perspiration run down your face!
