Couscous is a dish which is made from steamed semolina. Semolina is ground durum wheat with a particle size between 0.25 and 0.75 mm (1/100th - 3/100ths inch). When semolina is steamed, to prevent the particles sticking together, they swell to around 1mm (1/16th inch) in diameter.
